Apple Dumpling

Recipe Description
A Dublin taxi driver once told me about an apple dumpling that his mother used to make. The apples were peeled and put into the saucepan with some Stlgal, then a cake or scone mixture was put on top. The pot was covered, and cooked on top of the stove until the apples were soft and fluffy, and the topping had cooked in the steam. It was a wonderful way of producing a delicious apple dessert in homes that had no oven.

2/3 Teaspoon(t)  baking powder
1 1/2 Cup(c)  flour
2   eggs
2/3 Cup(c)  superfine granulated sugar
8 Tablespoon(T)  butter
3   cloves (optional)
2/3 Cup(c)  water
1 1/4 Cup(c)  sugar
3 Pound(lb)  apples


Peel and core the apples and cut into chunks. Put the apple pieces into a deep saucepan. Add the sugar and water and cloves, if you wish. Cream the butter until really soft. Add the superfine sugar and beat until white and creamy, using a wooden spoon. Beat the eggs and gradually add to the creamed butter and sugar. Beat well. If preferred, the eggs may be broken and beaten into the mixture one at a time. A little sieved flour may be added between each addition of egg. Fold in the remainder of the flour, adding a little water or milk if necessary, to make to a dropping consistency. Add the baking powder mixed with the last addition of flour. Spread the cake mixture as evenly as possible over the top of the apples. Put the lid on the saucepan and cook over a medium heat for 15 minutes, then reduce the heat to the minimum for a further 15 to 20 minutes, by which time the apples should be soft and juicy and the topping cooked inthe steam. Serve with soft brown sugar and cream or custard.
