Recipe Description
The apples are grated, not chopped, because the grated fruit is easy to distribute evenly throughout the batter and it doesn't sink to the bottom as the muffins bake.

2 Cup(c)  whole wheat flour
1/2 Cup(c)  unbleached, all purpose white flour
1 Teaspoon(t)  cinnamon, ground
1/8 Teaspoon(t)  allspice, ground
1 1/2 Teaspoon(t)  baking soda
1/2 Teaspoon(t)  baking powder
2   egg whites
1 Cup(c)  buttermilk
1/4 Cup(c)  vegetable oil
1/2 Cup(c)  honey
2   apples, peeled and grated


Preheat the oven to 350° F. Coat 12 muffin cups with non stick spray. Sift together the dry ingredients. In another bowl, beat the egg whites, buttermilk, oil and honey until creamy. Stir in the apples. Pour wet ingredients into the dry. Stir until moist. Pour into the muffin cups and bake for 25 to 30 minutes.
