Recipe Description
It's not unusual for our house to be full of guests on the weekend. Some Sunday mornings, my kitchen looks like a diner, with hungry faces eagerly leaning over the counter watching me cook made to order pancakes loaded with fruit, nuts and other goodies. Apple pancakes are a popular request and can be made with walnuts, my family's favorite, as well as pecans.

3   crisp apples, such as fuji or gala, cored, peeled and thinly sliced
3/4 Cup(c)  toasted walnuts or pecans, coarsely chopped, with some reserved for garnish
2   large eggs
1 Cup(c)  milk, or more if desired
4 Tablespoon(T)  unsalted butter, melted
2 Cup(c)  basic whole wheat pancake mix
1 Tablespoon(T)  cinnamon, ground
1 Tablespoon(T)  canola oil


Place the apple slices and walnut pieces within easy reach of the griddle. Place the eggs, milk and butter in a small bowl. Whisk to blend. Place the pancake mix and cinnamon in a medium bowl and whisk to combine well. Add the egg mixture in a slow stream, stirring constantly to blend. Do not over mix or the pancakes will be tough. If you like thinner pancakes, add up to 1/4 cup more milk. Heat a griddle or large skillet over medium low heat until a few drops of water sizzle when splashed on the surface. Brush some oil on the hot griddle. Working in batches if needed, spoon the batter onto the griddle to form pancakes that are about 4 inches in diameter. Arrange slices of apple on top and sprinkle the nuts over them. Cook the pancakes until small bubbles begin to appear in the batter, 1 1/2 to 2 minutes. Carefully flip the pancakes and cook until the other side is brown, 1 1/2 to 2 minutes. Transfer the pancakes to a warmed plate and garnish with the reserved walnuts and a dusting of confectioners' sugar. Serve the pancakes immediately with maple syrup.
