Recipe Description
This crisp recipe works equally as well with apples or pears. Use whichever fruit appeals to you the most, or is of the freshest quality.

Ingredients

1/2 Cup(c)  unsweetened apple juice concentrate
2 Tablespoon(T)  vegetable oil
2 1/2 Tablespoon(T)  minute tapioca
1/2 Teaspoon(t)  cinnamon
4 Cup(c)  apples or pears, peeled, cored and diced

Preparation

Preheat oven to 350°F. Oil a 9 by 9 by 2 inch glass or ceramic baking dish. In a large bowl, stir together all ingredients except topping. Pour mixture into prepared dish and add topping. Bake 50 to 55 minutes, or until topping is crisp looking and slightly golden. Remove dish from oven and place on a wire rack to cool. Serve warm or cold. Store uncovered cooled crisp in refrigerator. Freeze in portions.
