This is great bread for breakfast on the run. You can add a glaze if you like: Combine 1 cup confectioners' sugar 1/2 teaspoon vanilla, and 2 to 3 tablespoons milk and mix well, then drizzle over loaves.

1 Teaspoon(t)  vanilla
1 Cup(c)  buttermilk
1/2 Teaspoon(t)  salt
1/2 Teaspoon(t)  baking powder
1 Teaspoon(t)  baking soda
3 1/2 Cup(c)  fiour
4   eggs
2 Teaspoon(t)  cinnamon
1 Cup(c)  brown sugar
1 Cup(c)  sugar
1/3 Cup(c)  vegetable oil
1/2 Cup(c)  butter, softened
3   medium apples

Preparation

Preheat oven to 325° F. Generously grease and flour two 9 by 5 inch loaf pans and set aside. Peel and core apples and chop finely, by hand or in a food processor. In large bowl. combine chopped apples, butter, oil, sugar, cinnamon and eggs. Stir for 2 to 3 minutes, until blended. Add remaining ingredients and mix well to blend. Pour batter into prepared baking pans. Bake at 325° F for 60 to 75 minutes, until dark golden brown. Cool bread in pans for 5 minutes, then turn out of pans and cool on wire rack.
