Ingredients

2 Cup(c)  all purpose flour
2 Teaspoon(t)  low sodium baking powder
1/2 Teaspoon(t)  baking soda
1 Teaspoon(t)  cinnamon
1 Tablespoon(T)  sugar
1/4 Cup(c)  egg substitute
3 Tablespoon(T)  canola oil
1/2 Cup(c)  unsweetened apple juice
1 Cup(c)  unsweetened applesauce
1/3 Cup(c)  raisins
1/4 Cup(c)  pecans, finely chopped

Preparation

Preheat oven to 350° F. Combine all of the ingredients in a bowl, mixing until just blended. Pour into prepared muffin tins. Bake for 20 minutes.
