Recipe Description
The crisp, sweet bite of Macintosh apples are the perfect choice for this upside down cake. I like to add a little extra cinnamon too. The two go together so well!

1 Tablespoon(T)  all purpose flour
2 1/2 Teaspoon(t)  baking powder
1 Teaspoon(t)  baking soda
1 1/2 Teaspoon(t)  pure potato starch flour
1 1/2 Cup(c)  vegetable oil
3/4 Cup(c)  unsweetened apple juice concentrate
1 1/2 Teaspoon(t)  egg substitute
4 Tablespoon(T)  water
1 1/2 Teaspoon(t)  cinnamon
1 1/2 Cup(c)  vegetable oil
3 Cup(c)  mcintosh apples, peeled, cored and diced

Preparation

Preheat oven to 350 degrees F. Oil an 8 by 8 by 2 inch glass baking dish. To prepare topping: In a large bowl, toss together apples, oil, and cinnamon. Spread mixture evenly into prepared baking dish. In a large bowl, combine oil, cinnamon, concentrate, water, and potato-starch flour. Beat well. Add flour and beat for 2 minutes by hand. In a small bowl, and using a hand operated mechanical beater, beat together water and egg substitute until bubbles form (mixture should not be thick or stiff). Pour egg mixture into flour mixture and stir for 20 seconds by hand. Stir in baking soda and baking powder quickly, and mix (28 to 30 beats). Immediately pour mixture evenly over apple mixture. Bake 30 minutes at 350°F. Turn oven down to 325°F and bake another 5 minutes, or until a cake tester inserted in center of cake comes out clean. Remove baking dish from oven and place on a wire rack. Cool 25 minutes before loosening cake with a knife. Invert cake onto serving platter. Serve warm or cold. To store, place cooled cake in an airtight container and refrigerate or freeze.
