This is a special occasion side dish, that makes any day a holiday thanks to the rich harvest of flavors.

1/4 Cup(c)  walnuts, chopped
1 Tablespoon(T)  margarine
1   medium onion, chopped
48 Ounce(oz)  long grain & wild rice pilaf mix
1 Cup(c)  apple juice
1 Cup(c)  water
1/4 Teaspoon(t)  cinnamon
1   medium red apple, unpeeled and cut into 1/2 inch pieces


In medium saucepan, add nuts and heat over medium heat. Cook 5 to 6 minutes or until nuts are light golden brown and fragrant, stirring frequently. Remove from pan and set aside. In same saucepan, melt margarine over medium heat. Add onions and cook 3 minutes, stirring frequently. Add rice pilaf mix and cook 30 seconds, stirring occasionally. Add apple juice, water, contents of spice sack and cinnamon. Bring to a boil. Cover, reduce heat to low and simmer 30 minutes, or until most of liquid is absorbed. Stir in apple and walnuts and serve.
