Apples Dumplings Stuffed With Cranberry-nut Relish

What would beat a baked apple with cream on a cold day? Only this dumpling recipe made with chopped nuts and cranberry-orange relish. Use baking apples such as Rome beauties for the best result.

1 1/4 Ounce(oz)  frozen puff pastry (2 sheets)
1/2 Teaspoon(t)  pumpkin pie spice
1 Tablespoon(T)  unsalted butter
1/2 Cup(c)  boiling water
2 Tablespoon(T)  honey
1/2 Cup(c)  heavy cream, whipped
4   medium baking apples
2 Tablespoon(T)  blanched pistachios or walnuts, coarsely chopped
3 Tablespoon(T)  prepared cranberry-orange relish

Preparation

Preheat the oven to 375°F. Core the apples to within 1/2 inch of the bottom (a melon bailer or paring knife makes this easy) and set aside. Mix the cranberry and orange relish, pistachios and pumpkin pie spice in a small bowl, then spoon into the hollows of the apples and dot with the butter. Thaw the 2 sheets of frozen puff pastry according to package directions. Roll out the pastry. Cut each sheet into two 7 inch squares. Place a stuffed apple in the center of each one. Drizzle the apples with honey. Gather the 4 corners of each square, bring up, then pinch all edges to seal. Place the apples, not touching, on an ungreased foil lined baking sheet. Bake, uncovered for 30 to 40 minutes, or until the apples are tender when pierced with a toothpick. Serve hot or warm, topped, if desired, with dollops of whipped cream.
