This super easy spice cake is delicious with a simple frosting, like browned butter. You can make this as a sheet cake, or into layers.

2   eggs
1/4 Teaspoon(t)  baking powder
1/2 Teaspoon(t)  allspice, ground
1/2 Teaspoon(t)  cloves, ground
3/4 Teaspoon(t)  cinnamon, ground
1 1/2 Teaspoon(t)  salt
1 1/2 Tablespoon(T)  baking soda
1 1/2 Cup(c)  water
1 1/2 Cup(c)  applesauce
1/2 Cup(c)  shortening
1/2 Cup(c)  walnuts, chopped
1 Cup(c)  raisins
2 Cup(c)  sugar
2 1/2 Cup(c)  all purpose flour


Heat oven to 350 degrees F. Grease and flour rectangular pan, 13 by 9 by 2 inches, or 2 round pans, 8 or 9 by 1 1/2 inches. Beat all ingredients in large mixer bowl on low speed, scraping bowl constantly, for 30 seconds. Beat on high speed, scraping bowl occasionally, 3 minutes. Pour into pan(s). Bake until toothpick inserted in center comes out clean, rectangular 60 to 65 minutes, layers 50 to 55 minutes. Cool layers 10 minutes, then remove from pans. Cool completely.
