5 Cup(c)  tart apples, thinly sliced and peeled
1 Cup(c)  brown sugar, packed
1/4 Cup(c)  water
1 Tablespoon(T)  lemon juice
1/4 Cup(c)  all purpose flour
2 Tablespoon(T)  granulated sugar
3/4 Teaspoon(t)  salt
1 Teaspoon(t)  vanilla
3 Tablespoon(T)  margarine
1   favorite pastry for 9 inch two crust pie


Mix apples, brown sugar, water and lemon juice in 2 quart saucepan.  Heat to boiling, then reduce heat.  Cover and simmer just until apples are tender, about 7 to 8 minutes.  Mix flour, granulated sugar and salt.  Stir into apple mixture.  Cook, stirring constantly, until mixture thickens and boils.  Boil and stir 1 minute, then remove from heat.  Stir in vanilla and margarine.  Let cool.  Heat oven to 425 degrees F.  To prepare pastry:  Turn apple mixture into pastry lined pie plate.  Cover with top crust that has slits cut in it.  Seal and flute.  Cover edge with 2 to 3 inch strip of aluminum foil to prevent excessive browning.    Bake until crust is golden brown, about 40 to 45 minutes.  Remove foil during last 15 minutes of baking.
