Recipe Description
These light as air muffins are studded with chewy apricots and orange zest. For a treat, they can also be served at breakfast.

1 1/4 Cup(c)  all purpose flour
1 1/2 Teaspoon(t)  baking powder
1/2 Teaspoon(t)  salt
2 Tablespoon(T)  granulated sugar
2 Tablespoon(T)  liquid honey
1   egg
1/3 Cup(c)  orange juice
1/3 Cup(c)  whole milk
1/4 Cup(c)  butter, melted and cooled
1/2 Cup(c)  dried apricots, chopped


Preheat the oven to 400° F. Line 6 deep muffin tins with paper cups. Sift the flour, baking powder and salt into a large bowl. In another large bowl, mix together the sugar, honey, egg, orange juice, milk and cooled butter. Sift the dry ingredients into the egg mixture and fold in gently with a metal spoon. Do not beat or stir the mixture. Lightly fold in the chopped apricots. then divide the mixture equally into the paper cups. Bake for 15 minutes, or until well risen and golden brown. A skewer inserted into the center of the muffins should come out clean. Leave in the tin for a few minutes, then transfer to a wire rack to cool. Serve warm or cold.
