Apricot Couscous Pilaf

The carrots, apricots and curry powder create a pretty orange glow in this simple pilaf dish.

1/4 Cup(c)  dried apricots, sliced
1/4 Teaspoon(t)  kosher salt
1/2 Teaspoon(t)  curry powder
3/4 Cup(c)  couscous
1 1/2 Cup(c)  water
3 Tablespoon(T)  pecans or almonds, sliced
1/2 Cup(c)  carrots, peeled and cut into small cubes
1 Teaspoon(t)  vegetable oil


Heat the oil in a nonstick pan. Cook the carrots in the oil for about 3 minutes, until they begin to soften, keeping the pan covered. Add the nuts, increase the heat to high, and cook, uncovered, for 1 minute, until the nuts begin to brown. You'll be able to smell the change in their aroma. In another pot, bring the water to a boil. Stir in the couscous, curry powder, salt, apricots and carrot mixture. Cover, remove from the heat, and let rest for 5 minutes.
