Recipe Description
This strudel has been made in our house for years. I wanted to share the recipe and I hope you enjoy it as much as my family does.

Ingredients

20   graham crackers crushed to crumbs
1/2 Cup(c)  coconut (optional)
1/2 Cup(c)  white raisins
2/3 Cup(c)  walnuts, chopped
1 Cup(c)  apricot preserves (filling)
2 Tablespoon(T)  milk
2 Cup(c)  flour
1/2 Pound(lb)  butter, softened
8 Ounce(oz)  package cream cheese, softened(dough)

Preparation

Place cream cheese and butter in a bowl of mixer or food processor and blend until creamy.

Add flour gradually, then add milk. If the dough is hard to handle, add more milk. Blend well to make dough and then remove from bowl and form into a nice size ball. Wrap in foil or plastic wrap. Refrigerate overnight.

 

Next day:
Preheat oven to 350 degree F.

Place dough on a floured board. Split dough into five pieces. Roll out each. Spread preserves on each thinly; sprinkle walnuts, raisins and coconut, if using, on each. Sprinkle graham cracker crumbs around the open ends to prevent leakage. Roll up each like a jelly roll. Place on a greased cookie sheet. Bake in a 350 degree F oven 30 to 45 minutes and check after 30 minutes to see if it is beige or tan in color. Cool on wax paper, then slice. If you want to freeze this, freeze before slicing.
