1/4 Cup(c)  lemon juice, freshly squeezed
1 Cup(c)  granulated sugar
2 Cup(c)  water, divided
1 Cup(c)  dried apricots


In a small saucepan, cover apricots with 1 cup of the water and bring to a boil over high heat. Reduce heat to medium and simmer until very tender and water has been absorbed, about 5 minutes. Meanwhile, in another saucepan, bring the remaining water and sugar to a boil over high heat. Reduce heat to medium and simmer for 2 minutes, until slightly thickened. Let cool to room temperature. In a food processor, using pulsing action, puree apricots, lemon juice and sugar syrup until smooth. If little bits of fruit remain, they will add texture to the sorbet. Freeze in ice cream maker according to manufacturer's directions or in a shallow pan covered with plastic wrap for at least 4 hours.

Additional notes

Store in the freezer for up to 2 days.
