Apricot Turkey Burgers

Ingredients

1/2 Teaspoon(t)  dried thyme leaves
1 Pound(lb)  ground turkey breast
1/4 Teaspoon(t)  salt and salad greens, if desired
1 Tablespoon(T)  vegetable oil
2 Tablespoon(T)  white vinegar
2 Tablespoon(T)  chopped fresh parsley
1   small red onion, finely chopped
1   medium red bell pepper, chopped (1 cup)
4   medium apricots, pitted and chopped, or 3 cups frozen sliced peaches, thawed and chopped (apricot salsa)
1/2 Cup(c)  apricot jam
1/2 Teaspoon(t)  salt

Preparation

Prepare Apricot Salsa.

Brush grill rack with vegetable oil. Heat coals or gas grill for direct heat.

Mix turkey, thyme and salt. Shape mixture into 4 patties, about 3/4 inch thick.

Cover and grill patties 4 to 5 inches from MEDIUM heat 12 to 15 minutes, turning and brushing patties with apricot jam after 6 minutes, until no longer pink in center. Discard any remaining Jam.

Serve burgers with Apricot Salsa.

Mix all ingredients. Cover and refrigerate until serving.
