Recipe Description
One of the simplest mezze you will ever come across is a bowl of green or black olives. In this recipe, the olives are flavored with spices, chili flakes, and preserved lemons for a distinctive Arabic flavor!

1 1/2 Cup(c)  mixed large, green and black olives, rinsed in olive oil and patted dry
1/2 Cup(c)  extra virgin olive oil
1/2 Teaspoon(t)  ground coriander
1 Teaspoon(t)  dried oregano or thyme
1 Pinch(pn)  pinch of dried chili flakes (optional)
1   preserved lemon, rinsed and thinly sliced
2 Teaspoon(t)  chopped fresh dill or cilantro, to garnish
4 Slice(sli)  warmed pita bread or other arab flat bread (optional), to serve


Put the olives in a serving bowl and pour over enough oil to cover. Stir in the coriander, then add the oregano and chili flakes, if using. Stir in the preserved lemon slices.

Just before serving, sprinkle with the dill.

Serve with warmed pita or other flat bread (optional) for mopping up the flavored oil.

Alternatively, cover and refrigerate for up to 1 week. Any leftover olives will keep almost indefinitely in the refrigerator in an airtight container.

Additional notes

Cook's Tip: When you put the olives in the refrigerator, the oil will become cloudy, but it will clear again as it returns to room temperature. Any leftover oil is delicious spooned over broiled provolone cheese or used in a salad dressing!
