Asian Millet Salad

Recipe Description
Millet gets quite hard when chilled. If you've refrigerated the millet between cooking it andpreparing this salad, add a teaspoon of water and reheat it slightly in the microwave.

2 Cup(c)  cooked millet, at room temperature
1 Cup(c)  mung bean sprouts
1/2 Cup(c)  cucumber, chopped
1/2 Cup(c)  snow peas, chopped
1/2 Cup(c)  red bell peppers, chopped
1/3 Cup(c)  scallions (green and white parts), sliced
1 Tablespoon(T)  soy sauce
1 Tablespoon(T)  mirin or dry sherry
1 Tablespoon(T)  rice vinegar
2 Teaspoon(t)  vegetable oil
1 Teaspoon(t)  sesame oil


In a large bowl, toss together the millet, sprouts, cucumber, snow peas, bell peppers and scallions. In a small bowl, stir together the remaining ingredients. Pour the dressing over the salad and toss to combine.
