Recipe Description
If you wish, sprinkle the salad with toasted sesame seeds before serving. Mung bean sprouts or sliced water chestnuts can be used in place of the celery.

Ingredients

1/2 Cup(c)  cashew halves or pieces
1 Cup(c)  carrots, cut into matchstick pieces
3/4 Cup(c)  stalk celery, cut into matchstick pieces
1/4 Cup(c)  green onions, cut into 1/2 inch pieces
1/3 Cup(c)  oil
1/4 Cup(c)  rice vinegar or white vinegar
2 Tablespoon(T)  soy sauce
1 Tablespoon(T)  ginger
1/4 Teaspoon(t)  pepper
2 Cup(c)  fresh spinach leaves
2 Cup(c)  cooked pork, cut in thin strips

Preparation

In medium bowl, combine all salad ingredients except spinach. In jar with tight fitting lid, combine all dressing ingredients. Shake well. Pour half of dressing over salad. Toss gently to mix. To serve, line 4 individual plates with spinach. Spoon salad over spinach. Pass remaining dressing.
