Recipe Description
This is an easy recipe to adjust for a crowd. Also great for rice leftovers.

Ingredients

1 Pound(lb)  spiced turkey sausage
2 Cup(c)  rice, cooked and chilled
1   soy sauce to taste
4   eggs, beaten
1 Package(pk)  mixed vegetables, frozen

Preparation

Steam rice and chill.

In large frying pan fry sausage and drain excess fat. Cook vegetables in microwave for about 3 to 4 minutes, or until tender.

Add rice and vegetables to sausage and heat through. Make a well in the center of the mixture and add eggs.

Cook until eggs begin to set and then blend into rice.

Season with soy sauce.
