Asparagus Potato Chowder

Ingredients

1   head cabbage, shredded
1/4 Cup(c)  nutritional yeast
1 Teaspoon(t)  dill, dried
1 Teaspoon(t)  celery seed
1 Teaspoon(t)  paprika
2 Clove(clv)  garlic, roughly chopped
1   yellow onion, roughly chopped
12 Ounce(oz)  asparagus, cut into 2 inch pieces
1 Pound(lb)  carrots, peeled and roughly chopped
1 Pound(lb)  red potatoes
8 Cup(c)  vegetable broth

Preparation

Add the broth, potatoes, carrots, asparagus, onion and garlic to a Dutch oven or large sized soup pot.  Cover and bring to a boil.  Reduce to a simmer and cook, covered, for 30 minutes.  Add the paprika, celery seed, dill and nutritional yeast.  Stir.  Using an immersion or a counter top blender, puree until almost smooth.  This soup tastes best with a bit of chunkiness.  Stir in the shredded cabbage and simmer for an additional 20 minutes.

Additional notes

Tip:  If you're using a counter top blender, let the soup cool slightly before pureeing, to avoid a hot liquid explosion.

I absolutely loved this chowder. it's been chilly here on the east coast, andi wanted a warm, hearty soup this weekend, and this was perfect! Creamy and hearty without being thick and heavy.
