Summer brought Aunt Josey's peach cake, always a special treat, because Uncle Lou, who had the fruit and vegetable concession at the local grocery, saved the most luscious peaches to bring home. Which made this cake extra special , as the cake was perfect and the peaches were the best around .

Ingredients

2 Tablespoon(T)  all purpose flour
2 Tablespoon(T)  sugar
1 Tablespoon(T)  unsalted butter
1 Cup(c)  baking powder
8 Teaspoon(t)  unsalted butter, at room temperature
2   large eggs, at room temperature
1/2 Cup(c)  pure vanilla extract
1 1/2 Pound(lb)  fresh peaches, unpeeled or peeled, pitted and sliced

Preparation

Preheat the oven to 350°F. Grease an 8 inch square cake pan. Prepare the topping: Combine the flour, sugar, and butter in a bowl, and blend with a fork or your fingers until thoroughly combined. Set it aside. Prepare the cake: Sift the flour, baking powder, and salt together into a bowl. Set it aside. Cream the butter and sugar with an electric mixer on medium speed, scraping the bowl several times, until light and fluffy, about 2 minutes. Blend in the eggs, one at a time, scraping the bowl after each addition. Then blend in the vanilla. Reduce the speed to low, add the flour mixture, and mix until just combined. Remove 1 tablespoon of the batter and mix it with the peach slices. Scrape the remaining batter into the prepared cake pan, and arrange the peach slices on top. Sprinkle the topping over the peaches. Bake on the center oven rack until lightly browned, about 45 minutes. Let the cake cool in the pan set on a wire rack. Cut the cake into squares, and serve warm or at room temperature.
