Recipe Description
This is the one soup that no matter how bad you were feeling you already felt better as soson as you could smell it being made. One taste on the road to recovery!

Ingredients

1 Cup(c)  chopped onion
1 Cup(c)  sliced celery
2 Cup(c)  sliced carrots
24 Ounce(oz)  skinned chicken breast halves
1 1/2 Cup(c)  fresh or frozen peas
1 Cup(c)  broken dried fettucini noodles, uncooked
1/2 Teaspoon(t)  pepper
1   bay leaf
8 Cup(c)  fat-free, reauced-sodium chicken broth
2   medium red potatoes, peeled and quartered

Preparation

Combine chicken, carrot, onion, celery, potatoes, broth, bay leaf, pepper, and noodles in a Dutch oven (or, ifyou don't have one, any large heavy saucepan); bring to a boil.

Cover, reduce heat, and simmer 25 minutes or until chicken is tender.

Cool to room temperature.

Remove chicken and bay leaf from Dutch oven.

Remove bones and shred chicken. Mash potatoes coarsely in Dutch oven.

Return chicken to Dutch oven; add fettucini.

Bring to a boil; cover and simmer 10 minutes. Stir in peas; cover and simmer 10 additional minutes.
