Baby Spinach And Roasted Garlic Salad

Tender young spinach leaves are packed with flavor and goodness. Here they are combined with sweet roasted garlic, crunchy pine nuts and zesty lemon juice, to create a healthy and delicious side dish.

Ingredients

12 Clove(clv)  garlic, unpeeled
1 Pound(lb)  baby spinach leaves
1/2 Cup(c)  pine nuts, lightly toasted
1/2   lemon, juiced
4 Tablespoon(T)  olive oil
1 Pinch(pn)  salt, to taste
1 Pinch(pn)  black pepper, ground, to taste

Preparation

Preheat the oven to 375° F. Place the unpeeled garlic cloves in a small roasting pan, drizzle over 2 tbsp of the olive oil and toss to coat. Bake the garlic cloves for about 15 minutes, until the skins are slightly charred. Place the garlic cloves, still in their skins, in a salad bowl. Add the spinach, pine nuts, lemon juice and remaining olive oil. Toss well to mix thoroughly, and season with plenty of salt and ground black pepper to taste. Serve immediately, gently squeezing the softened garlic puree out ofthe skins to eat.
