Recipe Description
These potatoes are actually twice baked. After cooking, the potatoes are hollowed out, mixed with bacon, then replaced into the skins. A delicious side dish, or meal in itself!

Ingredients

1 Pinch(pn)  salt, to taste
2 Tablespoon(T)  butter
8 Slice(sli)  bacon
6   large potatoes
1 Pinch(pn)  pepper, to taste

Preparation

Put potatoes in the oven and bake at 350° F until done, about 1 hour. Then take out and roll slightly. Cut a slice from side and scoop out inside into a bowl. Chop in small pieces. To this, add 8 slices of bacon which have been previously fried and chopped finely. Add butter, salt and pepper. Mix all together and put back in shells of potatoes. Lay in a pan and put in oven until thoroughly heated through, about 10 to 15 minutes.
