Bacon Swiss Quiche

Recipe Description
This crust less quiche combines smoky bacon and ham with Swiss cheese. This is a versatile dish that can be served either as Entree or Appetizer.

Ingredients

1 Pound(lb)  sliced bacon, cut into i-inch pieces
4   medium-size leeks
10   eggs
2 Cup(c)  milk
1/2 Tablespoon(T)  salt
1/8 Teaspoon(t)  ground nutmeg
3 Cup(c)  shredded swiss cheese
1/4   pound sliced cooked ham, cut into strips

Preparation

Cook bacon in a wide frying pan overmedium heat until crisp, stirring often.

Lift out, drain, and set aside. Discard all but 2 tablespoons of the drippings.

Cut off and discard root ends of leeks. Trim tops, leaving about 3 inches of green leaves. Discard coarse outer leaves.

Split leeks in half lengthwise and rinse well, then thinly slice crosswise and add to drippings in pan.

Cook over medium heat, stirring often, until leeks are limp.

Remove from heat.

In a large bowl, lightly beat eggs until blended.

Stir in milk, salt, and nutmeg.

Reserve 11/4cup each of the bacon and cheese.

Add remaining bacon, remaining cheese,leeks, and ham to egg mixture; stir until blended.

Pour into a greased 2-quart baking dish and sprinkle with reserved cheese and bacon. Bake in a 350 degree oven until a knife inserted in center comes out clean (35 to 40 minutes).

Let stand for 10 minutes before serving.
