Recipe Description
Most Ethiopian cuisine is based on the berbere spice mix. This seitan is perfect  simply sliced and panfried and served up with lentils and rice or your favorite green vegetable.

1   berbere spice blend
2 Cup(c)  vital wheat gluten flour
1 Cup(c)  chickpea flour
1 Cup(c)  water
1/2 Cup(c)  extra virgin olive oil
2 Tablespoon(T)  tomato paste
2 Tablespoon(T)  steak sauce


In a mixing bowl, combine the spice blend, wheat gluten, and flour.

In a separate bowl. combine the water, oil, tomato paste, and steak sauce.

Add the wet ingredients to the dry and knead for 5 minutes, or until well incorporated. Let stand for 20 minutes to rest.

Preheat the oven to 350°F

Divide the dough in half. Roughly shape each piece into a log about 6 inches

Place each log in the center of a sheet of aluminum foil and roll the foil around it. Twist the ends tight.

Bake, seam side down, for 1 hour.

 Let cool before unwrapping.

 Store in an airtight container in the refrigerator for up to a week, or freeze indefinitely.
