Baked Catfish With Capellini

A great twist on the traditional pasta dish. I found the addition of catfish to be more surprising and tasty than using shrimp.

2   medium green onions, chopped
2   garlic cloves, minced
1/4 Cup(c)  low-fat margarine
1   bay leaf, crushed
1 Tablespoon(T)  fresh lemon juice
14 1/2 Ounce(oz)  low-sodium stewed tomatoes, crushed
1/2 Teaspoon(t)  freshly ground black pepper
1/4 Teaspoon(t)  cayenne pepper
1/2 Teaspoon(t)  dried oregano
1/2 Teaspoon(t)  dried basil
3/4 Pound(lb)  angel hair pasta, cooked and drained
1   nonstick cooking spray
6   4-ounce catfish fillets


Preheat oven to 325°F.

Pat catfish fillets dry with a paper towel and place in a baking dish that has been coated with nonstick cooking spray.

Saute green onions and garlic in margarine in a skillet until tender. Add bay leaf, lemon juice, tomatoes, pepper, cayenne, oregano, and basil.

Cook until heated through. Pour sauce over catfish and bake, uncovered, until fish is flaky, about 20 minutes. Divide pasta among 6 plates and place a fillet with sauce over each nest of pasta.
