Baked Cod

Recipe Description
In times passed, milk was put into skimming containers in the cold daily to set. Rich, thick cream could be spooned off the top to add a little extra flavor to a dish. Cooking in cream or creamy milk can transform even the dullest white fish into a feast. A mixture of fresh herbs (e.g. parsley, chives, fennel and thyme leaves) can be used instead of bay leaves.

Ingredients

1 1/4 Cup(c)  roux
2 Cup(c)  light cream
4   fresh or dried bay leaves
1 Dash(ds)  salt and freshly ground pepper
1 Teaspoon(t)  onion, finely chopped
2 Teaspoon(t)  butter
6   pieces of cod (4 ounce fillets per serving)

Preparation

Melt butter in a saute pan just wide enough to take the fish. Fry the onion gently for a few minutes until soft but not colored. Put the cod in the pan and cook on both sides for 1 minute. Season with salt and freshly ground pepper. Add bay leaves. Cover with light cream and simmer with the lid on for 5 to 10 minutes, until the fish is cooked. Remove the fish to a serving dish. Bring the cooking liquid to a boil and lightly thicken with roux. Taste and correct seasoning as desired. Coat fish with sauce and serve immediately.

Additional notes

This dish can be prepared ahead and reheated, and it also freezes well. Reheat in a moderate oven 350°F for anything from 10 to 30 minutes, depending on the size of the container. For a whole meal in one dish, pipe a ruff of fluffy mashed potato around the edge.
