Recipe Description
An easy rice dish that combines leftover rice with flavorful bacon. The combination is baked in a zesty tomato sauce, creating a delicious Creole experience.

1 Pinch(pn)  pepper, to taste
1 Pinch(pn)  salt, to taste
1   onion, chopped
5 1/2 Cup(c)  tomato soup, divided
4 Slice(sli)  bacon
5 1/2 Cup(c)  meat stock
2 Cup(c)  cooked, leftover rice


Add the rice gradually to the boiling stock. Place over hot water and let steam for 20 minutes until stock is absorbed. Brown the bacon slightly and remove to another pan. Cook onion in bacon fat until well browned. Add the rice and mix well. Add 3/4 cup of tomato soup. Put the rice in baking dish. Cover with remaining tomato soup and slices of bacon. Brown in a 400° F oven for about 10 to 15 minutes.
