Recipe Description
If you don't have pita bread on hand, you can use thinly sliced bagels or day old rye bread. If the pitas around the edge of the baking sheet brown too fast, move them toward the center and the paler ones toward the edges.

1 Clove(clv)  garlic, minced
1 Teaspoon(t)  dijon mustard
1 Teaspoon(t)  lemon juice
1/2 Teaspoon(t)  dried basil, crumbled
1 Package(pk)  small pita breads
1/8 Teaspoon(t)  salt
1/8 Teaspoon(t)  black pepper
2 Tablespoon(T)  olive oil

Preparation

Preheat the oven to 375 degrees F. Combine the oil, garlic, mustard, lemon juice and basil in a small bowl. Split the pitas in half horizontally. Using a pastry brush dampened with water, brush the cut sides of each piece of pita with the oil mixture. Stack the pitas into 2 piles. Using a sharp knife, cut each stack into quarters. Arrange the pitas in a single layer on 2 ungreased baking sheets, sprinkle with the salt and pepper, and bake, uncovered, for 15 to 20 minutes, or until golden brown.
