T.G.I. Friday's always has delicious appetizers and hearty baked potato skins are one of my long-standing favorites.

1   green onion, diced
1/2 Cup(c)  sliced crispy-fried bacon (about 5 strips)
3/4 Cup(c)  shredded cheddar cheese
1 Dash(ds)  seasoned salt, to taste
1 Tablespoon(T)  melted butter
5   medium potatoes


Preheat the oven to 35O°F.

Wash the potatoes well and score them with a fork 4 or 5 times all around the potato. Bake the potatoes directly on the oven rack until they are fork tender, about 35 minutes.

Remove the potatoes from the oven and allow them to cool. Cut the potatoes in half and scoop out the meat of the potato, leaving approximately 1/4 inch still on the skin.

Turn the oven to 375°F.

Brush the potato shells with the melted butter, sprinkle them with the seasoned salt, and bake for 15 to 20 minutes until they are crisp but not dry and hard.

Remove the potatoes from the oven and sprinkle them with the cheese, and onion, them put them back in the oven until the cheese is melted. Serve with sour cream or, for a bit of variety, try Ranch dressing.
