Recipe Description
This is a super easy and flavorful chicken casserole that will become a staple in your house. By rinsing the canned corn and beans, you eliminate much of the sodium in this dish, making it extra healthy. Serve this with brown rice for a complete meal.

4   boneless skinless chicken breasts
2 Cup(c)  prepared salsa
1 Can(cn)  corn, drained and rinsed
1 Can(cn)  black beans, drained and rinsed

Preparation

In a large bowl, combine the salsa, corn and black beans. Place the chicken breasts in a casserole dish and cover with the salsa mixture. Cover with foil and bake at 350º for 45 minutes or until chicken is cooked through. Serve immediately.
