A simple and easy way of preparing corn on a busy weeknight. The kids always love eating corn this way, and it's a cinch to put together.

4 Slice(sli)  bacon, diced
1/2 Cup(c)  onion, diced
24 Ounce(oz)  corn, drained
2   eggs, beaten
1 Cup(c)  bread crumbs


Dice bacon and fry, adding diced onion. Cook until bacon is half done and onion is cooked but not brown. Remove bacon, add corn and 2 eggs, beaten, to bacon fat (2 tbsp.). Pour in baking dish. Crumble bacon over top, then sprinkle with bread crumbs. Bake in a moderate 350° F oven until set and crumbs are brown.
