Recipe Description
Kids always love munching on these tasty treats, and adults know they also happen to be a healthy snack. Since these are baked, rather than fried, the overall fat content is a lot less than one would expect.

Ingredients

1/2 Cup(c)  breadcrumbs
1   egg, beaten
1/4 Teaspoon(t)  salt
1 Tablespoon(T)  brown sugar
2 Tablespoon(T)  butter
3 Tablespoon(T)  milk, warmed
3   medium sweet potatoes

Preparation

Boil potatoes with skins on until tender. Peel off skins, then mash. Add hot milk, butter, sugar, and salt. Whip until well mixed and fluffy. Form into small balls, dip in beaten egg, then crumbs. Bake in a moderate 350° F oven for 15 minutes.
