Ingredients

16 Tablespoon(T)  butter
5 Cup(c)  light brown sugar or superfine granulated sugar
16 Ounce(oz)  evaporated milk
3/4 Cup(c)  water
1/4 Teaspoon(t)  vanilla extract

Preparation

Melt the butter in a heavy bottomed saucepan over a low heat. Add the milk, water, sugar and vanilla. Stir with a whisk until the sugar is dissolved. Turn up the heat and simmer, stirring constantly, until it reaches the soft ball stage. To test, put a little of the fudge in a bowl of cold water. Pull the pan off the heat and stir until the fudge thickens and reaches the required consistency. Pour into a 9 by 13 inch roll pan and smooth out with a spatula. Allow to cool and then cut before completely cold.
