Recipe Description
A proper mincmeat takes time to cure, allowing the flavors to blend and mature. This recipe can be made far in advance of the holidays, when mincemeat is traditionally used.

1/3 Cup(c)  irish whiskey
5 Cup(c)  dark brown sugar, softened
1 1/2 Cup(c)  golden raisins
3 Cup(c)  raisins
1 1/2 Cup(c)  currants
3 Tablespoon(T)  orange marmalade
3/4 Cup(c)  mixed peel (preferably homemade)
1 Pound(lb)  beef suet, finely chopped
2   lemon
2   cooking apples


Core and bake the whole apples in a moderate oven at 350° F for about 45 minutes. When they are soft, remove the skin and mash the flesh into a pulp. Grate the rind from the lemons on the finest part of a stainless steel grater and squeeze out the juice. Add the other ingredients one by one, and as they are added, mix everything thoroughly together. Put into jars, cover with jam covers and leave to mature for 3 weeks before using. This mincemeat will keep for months or a year in a cool, airy place.
