Banana bread is always a hit in my house, but many recipes are often higher in fat. This one has far less fat and less guilt involved.

3/4 Cup(c)  bananas, mashed
1/3 Cup(c)  vegetable oil
4   egg whites
1/2 Cup(c)  water
2 Cup(c)  all purpose flour
1/2 Teaspoon(t)  cinnamon
1/2 Teaspoon(t)  nutmeg
1 Cup(c)  nuts, chopped
1 Teaspoon(t)  baking soda
2 Teaspoon(t)  baking powder


Preheat oven to 325° F. Coat a 9 by 5 by 2 3/4 inch loaf pan with vegetable oil or vegetable shortening. In a large bowl, and using a hand operated mechanical beater, whip together banana, oil, eggs and water. Add flour, cinnamon, nutmeg and nuts to banana mixture. Mix. Stir in baking soda and baking powder quickly, and then mix, 28 to 30 beats. Immediately pour batter into prepared loaf pan. Bake 50 to 53 minutes, or until a knife inserted in the center of the loaf comes out clean. Loosen bread from pan with a knife and turn loaf out onto a wire rack to cool. To store, wrap cooled loaf in plastic and store on countertop or freeze.
