Recipe Description
This is a simple recipe. My kids love to mash the bananas and help measure and pour the ingredients, and are very happy to eat the results of their labors, especially because they made them.

Ingredients

3   very ripe medium bananas, mashed
1 1/2 Cup(c)  all purpose flour
1/2 Cup(c)  sugar
1   large egg
4 Tablespoon(T)  unsalted butter, melted
1 Teaspoon(t)  baking soda
1/2 Teaspoon(t)  pure vanilla extract
1 Cup(c)  chocolate chips

Preparation

Preheat the oven to 375° F. Fill 12 muffin cups or 24 mini muffin cups with paper liners. Combine the mashed bananas, flour, sugar, egg, melted butter, baking soda and vanilla in a large bowl and mix thoroughly. Stir in the chocolate chips. Spoon the batter into the cups, filling them about two thirds full. Bake on the center oven rack until the muffins are brown and a cake tester comes out clean, about 25 minutes for standard muffins, 15 minutes for mini muffins. Let the muffins cool in the pan on a wire rack.
