Recipe Description
If you're craving traditional banana pudding (with vanilla wafers), this pie is a fast alternative.  The light custard is studded with many thin slices of banana.

Ingredients

1/2 Cup(c)  sugar
3 Tablespoon(T)  cornstarch
1 1/2 Teaspoon(t)  vanilla extract
2 1/2 Cup(c)  milk
2   bananas
2   eggs

Preparation

In a large, microwave safe bowl, combine all the ingredients for the filling except the eggs and bananas.  Microwave on high for 4 to 5 minutes, stirring occasionally, until the mixture is quite thick.  Place the eggs in a small bowl.  Slowly add approximately 1 cup of the filling to the eggs while beating quickly, to temper the eggs (to avoid scrambling them).  Add the egg mixture to the bowl of filling.  Microwave for 1 minute or so, to bring the mixture to a boil.  Do not skip this step.  When the filling is almost ready, slice the bananas into thin slices.  Place approximately half of the bananas into the bottom of the pie crust.  Pour half of the filling over the bananas.  Arrange the remaining bananas on top of the filling.  Cover with the remaining filling.  A light spray of nonstick cooking spray will help prevent a skin from forming over the top of the filling.  Refrigerate for several hours before serving.  Top with whipped cream or meringue, if desired.
