3 Ounce(oz)  walnuts, chopped
2 Ounce(oz)  milk
3 Teaspoon(t)  vanilla essence
3   medium very ripe bananas, mashed
1/2 Teaspoon(t)  lemon rind, grated
2   eggs
4 Ounce(oz)  light brown sugar, softened
7 Ounce(oz)  granulated sugar
8 Ounce(oz)  butter
1/2 Teaspoon(t)  salt
1/4 Teaspoon(t)  baking powder
9 Ounce(oz)  flour
1/2 Teaspoon(t)  lemon juice

Preparation

Preheat the oven to 350°F. Grease two 9 inch round cake tins, and line the bottoms with disks of buttered, greaseproof paper. Sift the flour with the baking powder and salt. In a large mixing bowl, cream the butter with the sugars until light and fluffy. Beat in the eggs, one at a time. Stir in the lemon rind. In a small bowl, mix the bananas with the vanilla and milk. Add the banana mixture and the dry ingredients to the butter mixture alternately, in two or three batches and stir until just blended. Fold in the nuts. Divide the batter between the cake tins and spread it out evenly. Bake until a skewer inserted in the center comes out clean, about 30 to 35 minutes. Let to stand for 5 minutes before removing on to a wire rack. Peel off the grease proof paper. For the frosting, cream the butter until smooth, then gradually beat in the sugar. Stir in the lemon rind and enough juice to make a spreadable consistency. Set one of the cake layers on a serving plate. Cover with about one third of the frosting. Top with the second cake layer. Spread the remaining frosting evenly over the top and sides of the cake.
