Recipe Description
Hearty lentils are flavored with crumbled bacon and stewed tomatoes, in this tasty side dish.

3 Slice(sli)  bacon
1   small onion, thinly sliced
1 Cup(c)  dried lentils, rinsed
1 Cup(c)  uncooked quick cooking barley
2 Teaspoon(t)  beef flavor instant bouillon
1 Teaspoon(t)  cumin
1/8 Teaspoon(t)  allspice
3 1/2 Cup(c)  water
14 1/2 Ounce(oz)  stewed tomatoes, undrained
2 Tablespoon(T)  fresh parsley, chopped


In 12 inch skillet, cook bacon over medium heat until crisp. Remove bacon from skillet. Drain on paper towels. Set aside. Add onion and lentils to bacon drippings in skillet. Cook over medium heat for 3 to 5 minutes, or until onion is tender and lentils are lightly browned. Add barley, bouillon, cumin, allspice and water. Bring to a boil. Reduce heat to medium low. Cover and simmer 15 minutes, or until lentils are soft. Add tomatoes. Cook uncovered for an additional 15 to 20 minutes, or until lentils and barley are tender and liquid is absorbed. Just before serving, stir in parsley. Crumble bacon over top.
