Basic Biscuit Mix (herbed Biscuits Variation)

Keep this basic biscuit mix on hand to use when biscuits are called for in various recipes. Or, enjoy them all by themselves.

Ingredients

3/4 Cup(c)  cold unsalted butter, cut into bits
1 1/2 Teaspoon(t)  salt
2 1/2 Tablespoon(T)  baking powder
1 Tablespoon(T)  non fat dry milk
6 Cup(c)  unsifted all purpose flour
1/4 Cup(c)  fresh herbs, chopped
1 Tablespoon(T)  non fat dry milk

Preparation

Sift the flour, dry milk, baking powder and salt into a large bowl. Add the butter and, using a pastry blender or 2 knives, cut it in until the texture of coarse meal. Transfer the mixture to a 2 quart preserving jar. Keeps in the refrigerator for 2 weeks. Place 1/3 of the Biscuit Mix (2 cups plus a scant 2/3 cup) in a large bowl. Add 1/4 cup minced fresh herbs, such as parsley, dill, or basil to the mix. Proceed as directed.
