Recipe Description
Corn bread makes an excellent topping for some dishes and a perfect accompaniment for others. If you like, double or triple the ingredients so that you'll have extra mix on hand.

2 Cup(c)  yellow or white cornmeal
2 Cup(c)  all purpose flour, unsifted
6 Tablespoon(T)  sugar
5 Teaspoon(t)  baking powder
1 Teaspoon(t)  salt


Place the cornmeal, flour, sugar, baking powder and salt in a large bowl and stir together. Transfer to a 1 1/2 quart preserving jar. Keeps in a cool, dry place for 2 months. Makes 4 1/2 cups (enough for two 8 by 8 by 2 inch or 9 by 9 by 2 inch pans of corn bread. Preheat the oven to 400 degrees F. Place 2 1/4 cups of the Corn Bread Mix in a large bowl and make a well in the center. Whisk 1 cup whole or low fat milk, 1/4 cup vegetable oil or melted butter or margarine, and 2 lightly beaten eggs together in a small bowl until combined. Pour into the well of the Corn Bread Mix and stir just enough to mix (the batter should be lumpy). Pour the batter into a greased 8 by 8 by 2 inch baking pan and smooth the top. Bake, uncovered, for 20 to 25 minutes, or until the corn bread is lightly browned and a toothpick inserted in the center comes out clean. Cut into squares.
