Recipe Description
Here's another lactose free, lower in fat recipe, that can take many guises.  This recipe provides baking instructions for smaller, more delicate meringues, or larger dessert meringues.

Ingredients

1 Teaspoon(t)  vanilla
1 Cup(c)  granulated sugar
1/2 Teaspoon(t)  cream of tartar
4   egg whites

Preparation

Preheat oven to 300°F.  In a medium bowl, using an electric mixer, beat egg whites and cream of tartar on high speed until soft peaks form.  Gradually beat in sugar, 1 tablespoonful at a time, until stiff peaks form.  Fold in vanilla.  For small meringues, spoon by heaped teaspoons onto baking sheet lined with parchment paper, forming into peaks and leaving 2 inches between each.  For dessert meringues, spoon about 1/4 cup for each meringue onto baking sheet, leaving 2 inches between each.  Using the back of a dampened spoon, indent centers.  In preheated oven, bake small meringues for 25 to 30 minutes, large meringues for 30 to 35 minutes, or until golden brown.  Turn oven off and let cool completely in oven.

Additional notes

place in a dry airtight container, such as a cake tin, and store at room temperature for up to 1 week or in the freezer for up to 4 months. Do not store in plastic or meringue will become soft.
