Recipe Description
Rice is one of the cornerstones of the Latin diet. Here's a great recipe for white rice that always comes out light, moist and fluffy. The secret is rinsing the rice before cooking it.

Ingredients

5 1/2 Cup(c)  long grain white rice, rinsed until the water runs clear
5 1/4 Cup(c)  water
1 Tablespoon(T)  canola oil
1/2 Teaspoon(t)  salt

Preparation

 

Place the rice in a large heavy saucepan. Add the water, oil and salt. Bring to a boil over high heat. Tightly cover the pan, reduce the heat to low, and cook for 18 minutes, or until tender. (Check the rice after 14 minutes. If it's too moist, set the cover ajar to allow some of the liquid to evaporate. If it's too dry, add a little water.) Remove the pan from heat and uncover. Drape a clean dish cloth over the top of the pan and replace the lid. Let the rice stand for at least 3 minutes or up to 10 minutes. Fluff with a fork.
