3   large ripe tomatoes, cored and thickly sliced (about 1 1/4 pounds)
6   large fresh basil leaves, thinly sliced
1 1/2 Teaspoon(t)  balsamic vinegar
1 1/2 Teaspoon(t)  extra virgin olive oil
1/8 Teaspoon(t)  kosher salt
1/8 Teaspoon(t)  pepper, freshly ground
2 Ounce(oz)  goat cheese or fresh mozzarella, sliced (optional)


Arrange the tomatoes in an overlapping layer on a plate. Distribute the basil across the tomatoes. Sprinkle with the vinegar and oil. Dust with the salt and pepper. Garnish with cheese, if desired.
