Cousin Jackie says this delicious dessert is like a reliable friend. She's been making it for as long as she can remember, and it always brings the requisite ooh's and aah's with its buttery, cookie like crust, cheesecake filling (and who doesn't like cheesecake?), and cinnamony apple crown. It would be smashing with warm caramel sauce dripping down the side and a dollop of whipped cream, but it is fine on its own too. And in case you're wondering, no, Jackie has no Bavarian blood. I've never known her to yodel, and to my recollection, she's never worn braids.

1/4 Teaspoon(t)  almonds, sliced
4 Cup(c)  apples, thinly sliced and peeled
1/2 Teaspoon(t)  cinnamon, ground
2   large eggs, at room temperature
2 Cup(c)  cream cheese, at room temperature
1 Cup(c)  all purpose flour
1/4 Teaspoon(t)  pure vanilla extract
1/3 Cup(c)  sugar
8 Tablespoon(T)  unsalted butter, at room temperature


Preheat the oven to 450°F. Have ready an ungreased 9 inch spring form pan. To prepare the crust: Cream the butter, sugar, and vanilla with an electric mixer on medium speed until blended. Beat in the flour just until combined. Use your fingers to spread the dough over the bottom and 1 1/2 inches up the sides of the spring form pan. To prepare the filling: Beat the cream cheese and sugar with an electric mixer on medium speed until thoroughly combined. Add the eggs and vanilla, and mix well. Scrape the cheese mixture into the prepared crust. To prepare the topping: Mix the sugar and cinnamon together in a small bowl. Place the apples in a large bowl, add the cinnamon and sugar, and toss. Arrange the apples on top of the batter, and sprinkle with the almonds. Bake on the center oven rack for 10 minutes. Reduce the heat to 400 degrees F, and continue baking until set, about 25 to 35 minutes more. Let the cake cool completely in the pan on a wire rack. Then wrap it in plastic wrap and refrigerate it overnight. Remove the spring form sides, cut the cake into wedges, and serve.
