Bbq Chicken Pizza

Recipe Description
This is the original, and now most popular, barbecue chicken pizza, introduced in the first California Pizza Kitchen in 1985.  A delicious and unique dish that includes barbecue chicken, barbecue sauce, smoked gouda and mozzarella cheeses.

Ingredients

2 Tablespoon(T)  fresh cilantro, chopped
1/2   small red onion, sliced into 1/2 inch pieces
1 Cup(c)  mozzarella cheese, shredded
2 Tablespoon(T)  smoked gouda cheese, shredded
2 Tablespoon(T)  flour
1   premade pizza dough
1/2 Cup(c)  barbecue sauce
1 Tablespoon(T)  olive oil
1   boneless, skinless chicken breast

Preparation

Cook the chicken in the oil in a large skillet over medium heat for 5 to 6 minutes.  Be careful not to overcook.  Set aside in the refrigerator.  Once the chicken is chilled, coat with half the barbecue sauce, cut into bite sized pieces, and set aside.  Preheat the oven to 425°F.  Follow the instructions on the store-bought pizza dough or dough mix to prepare enough dough for a 10 inch crust.  Form the pizza dough into a ball and roll out on a floured surface until 10 inches wide, round, and flat.  Put the pizza crust onto a baking sheet and spread the remaining barbecue sauce evenly over the crust.  Sprinkle the Gouda cheese and 1/2 cup of the mozzarella over the sauce.  Add the barbecue chicken and red onion, then cover with the remaining 1/2 cup mozzarella.  Sprinkle the cilantro on top of the mozzarella.  Bake for 10 minutes or until the crust is crisp and golden.

Additional notes

Use leftover chicken when preparing this dish.  It's so easy to prepare that the kids can help, too!
