Recipe Description
This simple hot dip is a favorite for summer pool parties or after skiing. The little pockets of hot pepper cheese give it some zing!

Ingredients

2 Ounce(oz)  hot pepper cheese, cut into very small dice
1/2 Teaspoon(t)  ground cumin
1 Tablespoon(T)  chopped fresh cilantro for garnish
1 Package(pk)  tortilla chips and/or crisp vegetable slices for dipping
15 Ounce(oz)  chili beans in sauce

Preparation

Drain chili beans, reserving 2 to 3 tbs. liquid. Place beans and cumin in a food processor workbowl and process until smooth. Pour into a shallow microwave or souffle dish. Stir in diced cheese. If using the microwave, heat uncovered on MEDIUM power for 2 to 3 minutes, stir and continue to cook until beans are hot but cheese is not completely melted. Or heat in a small saucepan on the stove and pour into a warmed shallow serving container. Sprinkle with chopped cilantro. Serve warm.
